What species would be suitable moderate size tanks with temperatures between say 60-78 degrees?

Lots and lots of sub tropical fish, also temperate intertidal species would be fine in the lower range of your desired temperatures.

Many of the shallow water animals from California to Oregon would do just fine in the low 60's.
